Grainless Mozzarella Stuffed Meatballs and "Polenta"

Sitting here on this cold cold day I am craving something that warms the soul, comfort food at its best. This grain-free low carb Italian goodness will fully satisfy and stabilize blood sugar levels. Get in my belly!

 

Meatballs:

1 lb Italian sausage

1 lb ground beef

1/2 cup almond flour

2 TS Italian seasoning

Salt and pepper to taste

2 eggs

1 cup shredded mozzarella 

1 28oz can of fire roasted tomatoes 

 

Polenta:

One large head of cauliflower chopped

Two garlic cloves

Salt and pepper to taste

2 TS of grass-fed butter

2 TS of half and half or whole milk

 

Directions:

Preheat oven at 400. Combine beef, Italian sausage, eggs, almond flour, Italian seasoning and salt and pepper. Knead until well combined. In a baking dish, make into meatballs. Smash them into patty size round circles. Put about a tablespoon of mozzarella on each patty (should make about 14). Form the meat around the cheese to form a ball, the cheese may be on the outside a bit. Bake for 20 mins. Add canned tomatoes and bake for additional couple mins to warm. Salt and pepper to taste. 

While the meatballs are cooking, boil a pot of water. Place cauliflower and boil for 15-20 mins till tender. Remove from heat and strain. Put cooked cauliflower back in the pot. Add butter, milk, garlic and seasoning to cauliflower. Use a emulsifier blender to mash into a puree.
