Grain Free Blueberry Peach Garlett
Grain Free Blueberry Peach Galette!
Snow, snow and more snow always gets me in the mood to bake. This rustic paleo style galette is perfect for brunch or anytime!
What you’ll need:
1 cup grain free flour (I like mixing cassava and tapioca)
3 cups frozen blueberries and peaches, thawed
1/2 cup coconut sugar
6 tablespoons butter or coconut oil
3 tablespoons cold water
pinch of salt
1 lemon zested
To make dough combine flour, salt and 1 tablespoon of cocoanut sugar. Chop butter into small pieces and add to mix, I like using my hands to knead and combine. Add 3 tablespoons of cold water. Once combined well, cover and refrigerate for at 30 minutes.
In a mixing bowl combine berries, peaches, coconut sugar and lemon zest.
Preheat oven at 425. Once dough is chilled, roll out into a 10-12 inch circle on parchment paper. Transfer the parchment paper to a baking sheet. Pour berry mix into the center making sure to leave 2 inches along the edges. Carefully fold the edges in and make sure they are sealed.
Bake at 425 for 5 mins. Turn down to 375 and bake for 25-30 mins.
