Chocolate Coconut Bars

Candy bar anyone? Yes please!!! I like providing healthy AND satisfying alternatives to our favorite foods. These are my absolute favorite. 

What you'll need:

Filling:

- 2 cups unsweetened shredded coconut

- 1 cup coconut oil

- 1 teaspoon vanilla 

- 3 tablespoons of coconut sugar syrup 

- pinch of salt 

Topping:

- 4oz of unsweetened baking chocolate

Melt coconut oil. Combine coconut flakes, coconut oil, syrup, vanilla and salt. I like to use my bread pan lined with parchment paper, pour mixture in. Press into form, freeze. In a double boiler melt baking chocolate, stirring frequently. Once melted pour onto frozen mixture. Spread evenly. Return to the freezer for an hour. Remove, use the parchment paper to help get the bar out. Cut into bit size delights. Keep in freezer or refrigerator. Happy Healthy Induging! ~Katie
