Bone Broth Chicken Tortilla Soup
Want to fix the most creamy and rich soups and stews? Use meat with the bone in. This way you will get all those yummy and healthy fats that come from the bone. Once you have made this receipt you can use the bones to make bone broth, receipt in my blog. Great way to use everything, nothing to waste here!
- 1 whole chicken
- 1 28oz can of fire roasted tomatoes
- 1 large onion, diced
- 2 garlic cloves, diced
- 1 large zucchini, diced
- 2 red, yellow or orange bell peppers, diced
- 1 packet of taco seasoning
- 1 4oz can of diced green chilis
- Toppings options: green onions, cheese, avocado, jalapeños
Add chicken, garlic and onion to a large cooking pot. Pour water into the pot till chicken is covered. Bring to a boil, reduce to low heat, cover and cook for 30 mins. Add the rest of the receipt, cover and cook till chicken is done (about 1 hour). Remove cooked chicken, remove all the meat and return to the pot. Serve. Add any toppings you like!
