Grain-free coffee cake
Oh breakfast and brunch how I love thee! Want to spice things up? Try this grain-free, refined sugar-free and low carb goodness. Grains tend to mess with me but I love to bake. That is why I like coming up with new ways to make delish healthy treats. I brought this to a brunch and no one even new it was healthy! Give it a try, you won’t regret it.
Ingredients:
Cake-
1 stick of butter or 1/2 cup coconut oil
1/4 teaspoon allspice
1 teaspoon baking powder
1/2 cup monkfruit sweetener (lower in sugar) or coconut sugar
2 1/2 cups almond flour or coconut flour or mixture of both
1 cup sour cream or 1 cup cream from canned coconut
2 eggs
Crumble-
2 cups almond flour or coconut flour or mixture of both
1/2 cup chopped nuts (pecans, walnuts, ect.)
1/4 cup monkfruit or coconut sugar
2 teaspoons cinnamon
1 stick of butter or 1/2 cup of coconut oil
pinch of salt
Directions-
Preheat the oven at 350. Mix cake ingredients together, pour 1/2 into 9x9 parchment paper lined baking dish. In a separate bowl mix crumble together till combined well, spread 1/2 on top of the cake. Repeat by adding the rest of the cake mixture followed by the rest of the crumble, makes a nice layered effect. Bake covered for 40-50. Once close to done remove the foil for 5 min.
